  • 6 large red or yellow onions
  • ½ cup dry white wine
  • 4 tbsp extra virgin olive oil
  • 8 cups beef stock
  • 2 tbsp butter
  • 8 slices of baguette or French bread (1 inch thick)
  • 2 tbsp brandy (optional)
  • 2 garlic cloves, minced
  • ½ tsp freshly ground black pepper
  • 1 tsp sugar
  • Kosher salt
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • 1 cup grated Gruyere
  • Sprinkling of Parmesan

Step 1: Caramelizing the Onions

Heat 3 tablespoons of olive oil in a pot over medium-low heat. Toss thinly sliced onions in the oil and cook for 15-20 minutes, stirring often until soft.

Increase the heat to medium-high, then add the remaining olive oil and butter, and continue stirring for another 15 minutes until the onions turn brown. Sprinkle with sugar and one tablespoon of salt, cooking for another 10-15 minutes until nicely browned. Add garlic and cook for a minute.

Step 2: Deglazing with White Wine

Pour white wine into the pot, scraping the browned bits from the sides and bottom.
