Portillo's Sweet Peppers Recipe

  • 6 bell peppers (a mix of red, green, and yellow)

  • 1/4 cup red wine vinegar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the bell peppers, remove the stems, seeds, and membranes, and cut them into thin strips. Set them aside.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the sliced onions and minced garlic, and sauté the mixture until it becomes soft and translucent.
  4. Add the thin bell pepper strips to the skillet and cook for about five to seven minutes until they soften.
  5. In a small bowl, combine the red wine vinegar, sugar, dried oregano, crushed red pepper flakes, salt, and pepper. Stir until the sugar has dissolved.
  6. Pour the vinegar mixture over the bell peppers and onions in a skillet and stir well. Cook for an additional two to three minutes.
  7. Transfer the mixture to a baking dish and spread it out evenly.
  8. Place the baking dish in the preheated oven and bake for about 30-35 minutes until the peppers are tender and slightly caramelized.
