Ingredients for the Meatloaf:

  • 1 pound ground beef
  • 2 pounds ground pork
  • 2 green bell peppers (diced)
  • 1/3 cup shredded carrots
  • 1/2 cup minced onions
  • 3 garlic cloves (minced)
  • 1/4 cup dry breadcrumbs
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon black pepper
  • a pinch of granulated sugar
  • 1/2 teaspoon paprika
  • 1 teaspoon oregano
  • fresh thyme, for seasoning

Ingredients for the Mushroom Gravy:

  • 1 1/2 cups sliced mushrooms
  • 2 tablespoon butter
  • 1 teaspoon minced garlic
  • 2 tablespoons all-purpose flour
  • 1 3/4 cups beef broth
  • 1 teaspoon black pepper
  • 1 sprig of minced parsley

Instructions:

  1. Sauté all the vegetables. Heat oil in a skillet and sauté the minced onion, garlic, carrots, and bell peppers until softened. Set aside.
  2. Prepare the meatloaf batter. In a mixing bowl, beat eggs and add the other remaining meatloaf ingredients: ground beef and pork, 1/2 cup milk, a teaspoon of salt, a tablespoon of lemon juice, a teaspoon of black pepper, a pinch of granulated sugar, 1/2 teaspoon of paprika, 1 teaspoon of oregano, and fresh thyme. Gently mix all the ingredients including the sautéed vegetables. Coat the meatloaf batter with breadcrumbs.
  3. Bake the meatloaf. Grease the loaf pan with butter and add the meatloaf mixture. Press down the meatloaf mixture into the loaf pan. Bake in a preheated oven at 350°F for 1 hour. Let it rest for 30 minutes.
  4. Make the mushroom gravy. In a buttered pan, cook garlic and onion for a minute. Add the mushroom slices. Afterward, add the beef broth and flour. Whisk until it thickens. Season with salt and pepper, then cook again for 10 minutes until desired consistency.
