A Simple Haitian Spaghetti Recipe to Try at Home

Ingredients:

  • 1 pkg (16 oz) spaghetti
  • 4 - 6 Hotdogs
  • 1 onion, sliced
  • ¼ cup extra virgin olive oil
  • ​3 - 4 tbsps epis (Haitian seasoning)
  • ½ green bell pepper, sliced
  • ​2 tbsp vegetable oil
  • ½ red bell pepper, sliced
  • 1 chicken stock cube
  • ½ tbsp adobo
  • ½ tbsp garlic powder
  • 2 tbsp tomato paste
  • ½ to 1 scotch bonnet or habanero pepper, minced (Optional)

Instructions:

1. Slice the hotdogs into small bite-sized pieces and boil them for 3 - 5 minutes. Drain and set aside.

2. Cook the spaghetti according to package directions, adding pinches of salt and 2 tablespoons of vegetable oil into the water.

3. Once the spaghetti is cooked, remove it from the water. Before draining the water, reserve ½ cup of pasta water and dissolve the chicken broth cube in it.

4. Heat the extra virgin olive oil and 2 tablespoons of tomato paste over medium heat in the same pot used for the spaghetti. Saute for 2 - 3 minutes, stirring frequently to prevent burning.

5. Add hotdogs and epis, and saute for another minute or two, stirring frequently.

6. Incorporate remaining vegetables: onions, green and red bell peppers, along with adobo and garlic powder.

7. Add ½ scotch bonnet or habanero pepper for spiciness (optional). Saute for 2 - 3 minutes, stirring frequently.

8. Pour in the reserved pasta water with the dissolved chicken broth cube, bringing it to a simmer until the tomato paste fully dissolves into a sauce, about 1 - 2 minutes.
